This Instant Pot Shredded Beef Hack Makes Tacos Taste Like a Cheat Code
Shredded Beef Tacos with Bachan's Original BBQ Sauce, Queso Oaxaca, Sriracha, and Scallions
One of my go-to meal prep power moves? Beef chuck roast in the Instant Pot. Season it, sear it, toss in onions, garlic, a bay leaf, and some beef broth (or water if you’re feeling minimalist). Hit it with high pressure for 45–60 minutes, let it do a natural release, and boom—you’ve got rich, pull-apart, flavor-bomb shredded beef.
From there, it’s choose-your-own-adventure: toss it in a ragu, serve it alongside some roasted root vegetables for pot roast vibes, make Italian beef sandwiches… whatever. But my personal favorite? Mix it with either teriyaki sauce or, in this case, Bachan’s Original (or now the Spicy)Japanese BBQ sauce, then stack it with scallions, sriracha, and melty queso Oaxaco (Mexican mozzarella) on a corn tortilla. That’s how you get one of the most ridiculous tacos you’ll ever put in your mouth.
